Black Cod - Also known as Butterfish and Sablefish, when cold smoked, delivers firm yet velvety texture, moist snow white and a rich, bold flavor that is unforgettable.

Rockfish - Also known as Northern Pacific snapper, are vibrantly colored finfish. Its flesh is delicate and flaky and it offers a mild, sweet taste. The prized rockfish are Yelloweye Snapper and Red Rock.

Kinki - Also know as idiot fish, are often served whole and considered a favorite delicacy among the Japanese. Its skin color is brilliant red, its flesh is snow white and its flavor is delicate and super sweet.

Halibut - the worlds largest flatfish weighing up to 800 pounds, are valued for their mild taste and flaky flesh. Fillet or steak, halibut lends itself well to all sorts of cooking applications; an American favorite.

Kampachi - Kampachi is a delicious, high-value Hawaiian yellowtail fish; in fact, it is considered the king of all yellowtails. One of the healthiest fish on the market today; extremely rich in healthy Omega-3 fish oils, nearly twice as high as Atlantic salmon and even higher than Mackerel; and without detectable levels of mercury. With a rich taste and smooth firm texture, this fish is ideal both raw as well as cooked.
