Ivory kings look identical to regular kings on the outside, but their flesh is white to ivory in color with a somewhat more mild buttery taste. They are the most rare of all salmon representing less than 1% of the annual catch. Although there is no confirmed explanation as to why the meat of this salmon is white, it is possible that these fish do not consume the same high carotene diet of crab and shrimp as other salmon, but instead eat mainly other fish. Steelhead are a unique salmon in that they spawn several times, migrating between salt and fresh water. It is this migration which distinguishes them from their landlocked cousin, the rainbow trout. Steelhead have tender flesh and a mild, slightly nutty flavor.

An excellent value, this salmon has a low fat content. However, Keta from Yukon or Kotzebue are the exception to this rule. Those Keta can equal the best salmon in meat color and fat content due to the fact that those fish can be destined to spawn 3000 miles up river. All Keta are net caught.
